Our Bread

Each loaf of bread is unique and is born from a slow and natural fermentation process, done at the rhythm of the dough and not in a hurry.

The extended fermentation time develops deeper, more complex flavors, a subtle acidity, and greater digestibility. We work with miller's flours, which are less refined and more vibrant, many of them ground in stone or water mills, or through artisanal processes that preserve the germ, minerals, and natural character of the grain.

Each flour brings with it its own texture, aroma, and nuances, which vary depending on the milling process, the grain, and the season.

The result is bread with a caramelized and aromatic crust, a moist and structured crumb, with irregular and organic shapes that reflect a living and artisanal process.

 

Breads with their own identity, linked to time, origin and raw materials — made to naturally retain more flavor and more life over the days.
